I have been dying to blog about this.  Jar Cakes.  I first read about them a few years ago by a military wife who was sending them to her hubby overseas.  You bake them in the jar, and just stick the lid on right afterwards so the heat seals them.

I originally made some red velvet jar cakes and based off of lots of research (trolling the comments of other blogs) that I should stick to vegan for when I want to send them overseas.  Thus ensuring they don’t spoil and get all nasty.  I took THIS RECIPE but with a few minor changes.  I used almond milk for soy, a rich vanilla bean paste instead of extract, and apple cider vinegar instead of white.  I keep seeing  people using applesauce instead of oil.  So I decide divvy up my recipe into halves.  Half was made with 1/3 cup oil and half with applesauce.  My mother and I taste tested them and couldn’t tell the difference.  So I sent my guy 4 jar cakes with the oil made ones, and gave out/ ate the ones made with applesauce.  They got sent in the first care package.  He had to give one of the jars to my sisters fiance.  He works in the same area as my man.

For the second care package I made Strawberry Lemonande Cake

in a jar.  That recipe I found because of a scrumptious looking photo on pinterest.   I had “veganfy” it so I didn’t give the man food poisoning.  This pic shows myingredients list plus a little water.  The turned out pretty darn good, I mixed some of the lemonade drink mix into the batter.  I did replace the oil and eggs with applesauce.  They kind of came out with almost a muffin like texture.  Here are a few photos to show the process.  I’m so happy I started remembering to photograph stuff again.  I really wish my little pocket canon 13megapix took crisper photos, or even my phone 8megapix.  My DSLR takes some of the best ever, but it’s pretty awkward to pull that thing out in the middle of a restaurant.  It obviously screams “I’M TRYING TO BE A FOODIE AND RUN A BLOG”

This is my Georgie.  This is how he looks at me whenever I cook and don’t give him anything.

I’ve got a meeting in the morning, followed by finishing up a listing I just got.  I would like to catch and episode of Golden Girls before I pass out. My listing is for a 2 bed/ 2 bath condo close to Ft. Bragg and shopping.  It’s going to be $63,000.  I will post photos of it tomorrow.

It’s taken almost 2 hours to post this, mostly because it’s been so long since I’ve done it.  Excited to get back into it.  Now that I got to talk about my 2 big projects, it will be a lot of day to day stuff.  I will do my best not to disappoint.

I’m in the process of ransacking my house looking for my camera charger, so there will be pics in the upcoming posts. I will also be doing video blogging. This is just my intro post. I hope you all enjoy.

George and I went to Tom Sawyer.  First we went on a run for me, then to the dog park for him.   I love being able to let him off the leash and he gets to run to his hearts content and play with the other dogs.

Afterward we hung out and laid around the apt till about noon, and I was craving some tuna AGAIN.

TUNA with Hummus, and TONS of relish on an Arnold Thin.   I love tuna, its cheap, and I happen to have a ton of it already in my cupboards.  I’m tight on cash, so being resourceful and not going to the WH is essential for me.

School was next on the agenda.  Got out of class about 20 minutes early, so I had time to meet the bf for my dinner.  He chose the place, and it was close to my route.  Third Street Cafe.  I was not impressed, they had tons of vegan or vegetarian food, but majority of it was pre-made so I couldn’t modify it to my liking.  So I went with a somewhat guilty pleasure. The bf paid, he’s so sweet.

Doesn’t look to0 appetizing right????  It was okay, I love BBQ sauce, so that was the reason

Soybeans, carrots, apples, wheatberries, celery, and I think some onion.  TWAS yummy.  I will definitely recreate this on my own.

I worked after this, the bf went to my apt to take care of Georgie for me, since he wanted to take up my time between school and work.  Speaking of which, work was a bore, and I’m hoping for it to be better tonight.

I just ate another no fuss breakfast.

We ordered a few things and split it all up.  I like to have more variety anyway.

MY FAVE- “Jimmy the Greek” Fritatta with and plain grits, and an “Everything” Muffin. The bf also got his own side of the Grits of the Day,  they had Chorizo on the them, hence I got the plain ones.

Wild Berry Crepes-  Sorry about the bad picture, we had already taken a few bites when I remembered to take a picture.  They were disappointing to say the leas I know it looks like a lot of food here, but it was only 3 thin crepes, rolled up to about the width of my thumb, then topped with TOO much whipped creme,and sugary sauce.

We also got

A side of fruit, which we boxed up because we were so full.  In addition to all this we split a glass of low sodium V8.  Which I added a ton of pepper and hot sauce to.

Afterward we took Georgi up to Tom Sawyer Park, and walked around the track for a while then with beach towel in tow we found a shady spot to plop down at.  It was such a relaxing afternoon.  We read, talked, goofed around, and snacked on our leftover fruit.

Unfortunately the day couldn’t all be fun.  After the park, the pup went home, and I went to work.

Today has been okay.  I turned in my Art History paper today.  I worked my butt off on that paper, so I had better get a good grade.  Math was a bore, came home and tidied up, and finally started putting away some of the stuff from from the old apartment.  I still need to fold a mountain of laundry.

The bf came over, and we took Georgie to Tom Sawyer Park again.  My little boy is spoiled rotten.  After I finish this up, I have to write my first draft of an essay for my English class.  This is an easy assignment though, thank goodness.  Have a great night.

I had a great night out with my girl.

Today has been very productive.  I mixed up my schedule, and thought I had to be at work at 11, but turns out it is 5.  So I came home and made some lunch.  I marinated a few portobello’s in balsamic vinegar and a tablespoon of sucanat.  I then sauteed them with zucchini and red peppers, and ate it over an Arnold Thin.  It was yummy

Gotta head to work now.  Hope u enjoy the rest of ur weekend.
